Job Description
Position Summary:
The Demi Chef de Partie – Pastry supports the Pastry Chef and Chef de Partie in preparing high-quality desserts, pastries, and baked goods. This role requires strong attention to detail, creativity, consistency, and the ability to work efficiently in a fast-paced kitchen environment.

Key Responsibilities: Pastry Production
• Assist in preparing and baking pastries, cakes, tarts, cookies, and specialty desserts.
• Follow recipes and presentation standards to ensure consistency.
• Prepare doughs, creams, fillings, mousses, sauces, and glazes.
• Support with decorating and finishing desserts to brand standards.

Daily Operations
• Set up the pastry station before service and ensure all ingredients and tools are ready.
• Maintain cleanliness and organization of the pastry section throughout the shift.
• Monitor stock levels and inform the senior pastry team about shortages.
• Assist in inventory rotation (FIFO) to maintain freshness and reduce wastage.

Quality & Safety
• Ensure all pastry items are prepared according to hygiene, safety, and food-handling guidelines.
• Maintain high standards of taste, texture, and visual appearance.
• Follow all HACCP and food safety protocols strictly.

Teamwork & Support
• Collaborate with chefs across departments for special events and menu items.
• Assist the Chef de Partie with planning and executing new pastry items.
• Train and guide commis-level staff when required.

Service Support
• Prepare and plate desserts during service efficiently and accurately.
• Handle last-minute orders and special requests calmly and professionally.
